Paleo Tips & Tricks: Coconut Milk Ice Cubes

Recently I posted about these coconut milk popsicles I’ve been making lately to keep me cool and stay paleo in the summer Southern California heat. I just came up with another use for coconut milk in the freezer – coconut milk ice cubes! These are perfect for popping into my magic bullet blender the morning and using to make my morning smoothies.

Here’s what you will need:

• One Can of Coconut Milk
• One Ice Tray – [easyazon-link asin=”B00B7Q4DEU” locale=”us”]this is the one I have[/easyazon-link]

Pour the coconut milk evenly over the ice tray. You should find that it evenly disperses the entire can of coconut milk perfectly. Make sure you shake the can of coconut milk before you begin to pour or it won’t be mixed properly.

Once you’re done pouring the coconut milk into the ice cube tray, carefully place it in the freezer. Wait several hours until they become frozen before using.

When you pull the coconut cubes out of the freezer for the first time, they may be hard to get out. Place the ice cube tray over the sink and gently bend the ice cube tray until it makes that “cracking” sound. But don’t do this too hard because the ice cube tray could snap. Yes, that has happened to me before and it ain’t pretty.

Once you are done, voila! Coconut Milk Cubes that are ready for smoothies:

I use about 2-3 cubes per smoothie. And now that I have coconut cubes instead of ice, I’ve been using coconut water or plain water in my smoothies. I don’t notice that they taste watered down at all and I really enjoy how much easier this is than grabbing a can opener and opening a can of coconut milk. I like to keep my prep work simple in the morning.

    Canned coconut milk often has additives and although some say the can is BPA free, what are they using instead?? Make your own coconut milk from organic shredded coconut..it’s easy!
    Lots of info on the web and utube
