Recipe: Paleo Stuffed Peppers

This is my favorite recipe for paleo stuffed peppers. I hope you enjoy it as much as I do! -Lindsay

Paleo Stuffed Peppers Recipe

I love paleo stuffed peppers. They are so healthy and good and delicious. Before I started eating paleo, I would make stuffed peppers with rice or stuffed peppers with cheese on top. But none of that flies with the paleo diet so I modified my recipe to make paleo stuffed peppers. And guess what? They are just as good and healthy, too!

Here’s what you will need:

  • 1 lb grass fed ground beef or ground turkey
  • 3-4 Bell Peppers (Any color. I used red.)
  • 2 cloves Garlic
  • 1/2 onion
  • 2 eggs
  • Spinach / Kale / Green Veggie of choice
  • 1 Can of Diced Tomatoes or 1 jar tomato sauce (I usually use whatever we have in the cupboard)
  • Oregano
  • Sea Salt
  • Cayenne Pepper
  • Thyme

Pre-heat oven to 350 degrees. Grease a 13 x 9 baking pan with coconut oil or melted ghee. Wash bell peppers and cut off the tops and scrape out the inside. Set aside.

In a food processor (this is the one I use), chop up the garlic, onion, and spinach / veggies of choice. Place the ground grass fed beef / ground turkey in a medium sized bowl. Add eggs. Then add garlic / onion / veggie mixture from the food processor. Add tomato sauce / diced tomatoes and spices. Use the amount of spice suited to your liking. Mix well.

Next, spoon the mixture into each bell pepper. I like to stuff them until they are full. If you end up having more mixture, you can stuff another bell pepper or add the mixture on top of the peppers and around the bottom of the pan.

Cover with foil and bake for 60 minutes in the oven, checking to make sure they are done. If you like your bell peppers really well cooked then you may want to keep it in the oven for longer. Just make sure you check on them.

You can serve with salad, a veggie, or just as is. I try and sneak a lot of spinach and green veggies into the ground meat mixture so we don’t have to have a side dish but it’s entirely up to you.

There you have it, an easy to make paleo stuffed peppers recipe. I love making paleo stuffed peppers even though I sometimes wish I could sprinkle them with cheese every now and again. But they do taste great either way. Enjoy!

    I’m confused as to how this recipe received 3 5-star ratings… were these ratings given prior to making the recipe? It took waaaaaay longer to cook them and the result was NOT worth the wait. Organic peppers made for an expensive bust on this one. I’m trying to figure out how to salvage the leftovers, but they might be beyond help 🙁

      Hey Jenn- I’m sorry to hear this recipe didn’t work out for you. How much longer did it take to cook? I have some peppers and ground beef in my fridge. I will make the recipe again this week and see if I can provide any new tips for you.

        I nearly doubled the time. I managed to salvage the rest by cracking an egg on top and popping them back in the oven, topped with a generous portion of hot sauce. Not something I’d want to share with others, but they ended up working for me as quick leftovers.

    I thought the recipe tasted really great, and my family loved it. I think next time I’ll add even more green veggies and maybe some sliced mushrooms. I did take a lot longer to cook-90 minutes actually. Maybe my peppers were way bigger??? I think next time I’ll cut them in half like boats to make them cook faster.

    This recipe was delicious but it did take about 60 minutes for mine to cook which wasn’t a big deal my peppers were pretty thick 🙂
    But the flavour and all was delicious. I didn’t use a food processor because I do not have one just chopped everything up really good and mixed in the meat eggs etc can’t wait to make it again!

    The beef did not cook at 40 minutes. I had to increase the temp to 400 degrees so the beef was cooked, about 5 minutes after. It was a mushy dinner. Perhaps I did not put enough seasoning and the beef was not lean enough, but the recipe was okay. Good recipe for a lot of vegetables though.
