Recipe: Paleo Pumpkin Bars

It’s been a while since I posted a recipe. I admit it’s been hard to be creative in the kitchen with little Baby Awesome crawling around but I am getting back into it – especially now that the holidays are here. Last year I discovered a really good paleo pumpkin bars recipe and I couldn’t remember how to make it. I knew the paleo pumpkin bars recipe only used four ingredients, but I couldn’t remember exactly what they were. I tried it with coconut flour, eggs, maple syrup, and pumpkin and the result was pretty dry and unappetizing because I had the ratios off. Then I remembered that the reason they were so moist was from almond flour, not coconut flour! I recreated them one recent Saturday morning and they were so good. Seriously. If you are looking for a pumpkin pie alternative for your next holiday gathering, look no further. These would be great served with some whipped cream or coconut whipped cream, paleo style.

Here’s what you will need:

  • 2 Cups Almond Flour (This is the kind I use.)
  • 1 Cup Organic Canned Pumpkin
  • 4 Eggs
  • 3/4 cup Maple Syrup
  • Pinch of Sea Salt
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon

Take a 13 x 9 baking pan and grease it using coconut oil (I like to take a small dab on a paper towel and swirl it on the baking dish). Next, pre-heat your oven to 350 degrees. In a medium-sized bowl, mix the pumpkin, eggs, maple syrup, and almond flour. Add the salt and spices. Mix well and thoroughly until everything is smooth.

Next, pour your batter in the baking dish. Set the time for 30 minutes. You’ll know when the paleo pumpkin bars are done because they will have a golden color. Place on the stove to cool.

I am warning you, these are really good and they go quickly. This recipe makes for about 12-16 paleo pumpkin bars depending on how big you make them. I recommend storing some in the fridge so you make sure to save some for later.
