Ground Beef Paleo Meatloaf Recipe Made in the Slow Cooker!
A lot of you have been asking me to post my paleo meatloaf recipe that I talk about here on Fit & Awesome, so here it is! This is an adaptation of a recipe I learned from my friend Jamie on Twitter who has a blog called Crossfit Travels. She is one of the first people I’ve ever talked to about paleo and the whole 30 / whole 9 healthy eating lifestyle and I’m very thankful for her knowledge and wisdom!
This paleo meatloaf is super easy and simple to make in the crockpot. I love my crockpot for cooking simple, healthy meals to eat during the weeknight. It’s the best!
Here’s what you will need:
- 2 Pounds Ground Meat. I’ve done this recipe with ground turkey and most recently with grass-fed ground beef. It’s good either way!
- 1 egg
- 1 can tomato sauce or diced tomatoes. I’ve done this with diced tomatoes from Trader Joe’s or cans / jars of tomato sauce. If you use a jar of tomato sauce make sure to read the label and stay away from any with added sugar and preservatives. Yuck.
- Veggies- To mix into the meatloaf. I really like using spinach, red peppers, and carrots.
- 1-2 cloves Garlic
- 1/2 Onion
- Spices- I use salt, pepper, and oregano to taste
First pour the diced tomatoes or tomato sauce into the crockpot and set it on low. Add whatever veggies you want into the tomato sauce for the base. I usually add chopped carrots.
In a separate mixing bowl, place the ground meat. Add the egg. It will look like the below.
Next, in a [easyazon-link asin=”B0000645YM” locale=”us”]food processor[/easyazon-link] mix up your veggies. I like to use spinach, red pepper, and carrots. You could also use kale. Add the garlic and onion to this mixture. If you don’t want to add garlic or onion, you don’t have to. I’ve made it without for friends with allergies before and it still tastes great!
Add the veggies into the ground meat and egg mixture and stir until well mixed. When the mixture is complete, shape into a football and carefully place in the crockpot.
Set the Crockpot on Low and cook for 4-5 hours. You can also set on high and it will be ready in 2-3 hours. Keep an eye on it either way. I have a crockpot with an auto self timer. You can view it [easyazon-link asin=”B001AO2PXK” locale=”us”]here[/easyazon-link].

This looks good! Paleo is a new thing for me. I’m already gluten free and have recently come off of all grains, at least temporarily, just to see if I am cross-reacting to any. I also learned that I’m allergic to potatoes and can’t eat them for a few months. (I dreamed about French fries last night!) Paleo is a good way for me to find recipes that have ingredients that I can eat. It’s so nice not to have to put my brain in ‘substitution gear’ for a change when looking at recipes! What size crockpot are you using?

Have you ever added mushrooms to this Meatloaf recipe? I’m wondering how they would cook up in the slow cooker.

I haven’t tried adding mushrooms the the recipe before but it sounds like it would be really good. You could probably add them to the meatloaf itself or as a stew veggie. I would go fresh mushroom vs canned. Im going to have to try this next time! If you end up adding mushrooms, let me know. Would love to see how it turns out!

Hi Hannah, I change this recipe up all the time depending on what’s in our fridge. For example, tonight I don’t have spinach or red peppers but I have kale and carrots so I will be using those. It all just depends. Luckily anything goes with this recipe. 🙂
This recipe is fabulous. Easy to prep and most importantly, tastes awesome! I used my Vitamix at level 3 or 4 in lieu of a food processor. I’ve made it twice in the last 3 weeks. Best part, it is a hit with my 4 year old!

I don’t see where it says any measurements on the amount of vegetables to use. Please let me know.

Thanks for the easy recipe. I ended up making a piquant sauce for the top: 4 juicy tomatoes, 1/4 C onion, 2T molasses, 1T mustard, a dab of wasabi. Whirl it up, pour on top prior to cooking! Yum! Not sure if molasses and mustard are Paleo, but I’m not strict, just avoiding grains and legumes.
is there any way you can give the measurments of the veggies??
Hi Cindy – I don’t have any exact measurements but I usually do a couple handfuls of spinach and one half of a red pepper. I try and sneak in as many veggies as I can and chop them up with the food processor. Hope this helps!
How big is the can of tomato sauce? I assumed a regular small can, but then you mentioned using a jar (as long as it’s sugar free) and jars are typically a lot bigger. So I’m just curious! Sorry if I’m overthinking!
I’m not even paleo but this recipe looks awesome. And I have been trying to cut out as many processed carbs from my diet as possible, so this would still be perfect for me 🙂
