In honor of Brain Awareness Week, I’ve teamed up with the folks at DOLE to create a healthy, brain smart recipe. I was asked to use one of the following ingredients in my recipe:
- Strawberries
- Blueberries
- Spinach
- Broccoli
What did I decide to use? Well, it was a tough choice but I decided to go with blueberries!
Blueberries are a superfood that’s packed with antioxidants. They’ve also been nicknamed “brainberries” for their brain health benefits such as helping to combat aging and improving memory. It doesn’t take a lot of blueberries to reap these benefits, either. You can boost your brain power in as little as 1 cup of blueberries a day.
I think blueberries are great to eat on their own as a snack, mixed with yogurt, or blended in smoothies. Since I am on a smoothie kick right now. I decided to make a smoothie recipe using blueberries. I tried a really delicious smoothie several months ago that combined blueberries and peanut butter. I was surprised I liked it so much because it’s two flavors that I normally would think don’t go together. I don’t remember what was in this delicious smoothie other than blueberries and peanut butter so I decided to try and make my own at home. Peanut butter is also good for brain health because it’s high in vitamin E which means this smoothie has double the brain power. Here is my delicious creation.
Brainberry Smoothie Recipe
Here’s What You Will Need:
- 1 Cup DOLE Blueberries
- 1 cup Coconut Milk (or any milk of your choice)
- 1 heaping TBSP Peanut Butter
- 1/2 DOLE Banana
- Ice
Take all ingredients and mix in blender on high until smooth. Pour into a cup and serve.
I really like quick, healthy, and easy options for breakfast and look forward to adding this recipe into my breakfast mix. After all, breakfast IS the most important meal of the day. I know the idea is to use blueberries but wonder how it would taste just as a banana smoothie?
Yes! If you don’t use blueberries I would recommend using a whole banana and maybe even 1-2 dates.
