All Things Coconut: The Amazing Benefit of this Healthy Fat
I love coconut. It has been my saving grace since becoming gluten-free and applying the principles of the whole30 and paleo diets into my lifestyle. It is an amazing source of healthy fat. Many think that coconut is not good for you because it is high in saturated fat. Well, the fat is actually a good fat! We should all look to add more sources of healthy fats like this into our diet on a daily basis.
There is so much coconut goodness out there in the world right now that I decided to do a post on it. Here are my favorite goodies to use in the kitchen.
If you cook a lot, these are great to have on hand in your kitchen. They can be used as a substitute for soy sauce and tamari sauce (wheat-free soy sauce) and are full of flavor.
Trader Joe’s Organic Virgin Coconut Oil
One of my favorite healthy cooking fats. It is the most nutrient dense part of the coconut so you know it has some very powerful healing and healthy qualities. It is solid so you have to let it melt. It can also be used as a body lotion or even in your hair to nourish and condition. It also has antioxidant properties and can help you absorb other minerals. Multi-purpose!
Ecos Beverages 100% Coconut Water
My favorite coconut water and a local brand out of Hermosa Beach. The best stuff on the market right now. Try it out. It’s so fresh and a great source of potassium for hydration.
Thai Kitchen Organic Coconut Milk
Coconut milk is paleo and whole30 approved, but it has to come from a can. The coconut milk in a can has less chemicals and bad stuff than the kind in the carton. I keep these on hand in my cupboard.
Bob’s Red Mill Organic Coconut Flour
Coconut flour is a great gluten free flour substitute. It can make the food dry so be careful with it.
I love this stuff. I have been putting it in baked good mixes. It is yummy. I think I may try it in some chia seed pudding next. Mmm mmm.
