Paleo Chocolate Pudding with Avocado (yes, avocado)
I have finally figured out a paleo chocolate pudding recipe that satisfies my sweet cravings and is healthy, too! I have been experimenting with this recipe for quite some time now and I’m ready to share. It has a very special ingredient in it. What is it? Avocado! Its what gives this pudding its creamy texture and it tastes BOMB. I’ve been kind of obsessed with the creamy texture of avocado in smoothies lately (check out my paleo green smoothie recipe with avocado) which is how this paleo chocolate pudding recipe was born. I wanted something chocolatey but paleo compliant. I had raw cacao powder in my cupboard and wala!
I made this paleo chocolate pudding recipe when I was doing my strict paleo whole life challenge and it was a really great dessert. Plus it is made with all natural ingredients! This recipe is not whole 30 approved, but it is gluten-free and paleo approved. Enjoy!
Here’s What You Will Need:
- 1/2 Avocado
- 1 Cup Coconut Milk
- 1/2 Banana
- 2 Dates (take the pits out)
- 1 TBSP Cacao Powder
- 1 Tsp Vanilla Extract
- 1 Tbsp Coconut Flakes (optional)
Combine all ingredients in a food processor ([easyazon-link asin=”B0000645YM” locale=”us”]this is the one I use[/easyazon-link]). Mix until smooth. Once smooth, taste your creation. If you think it needs a little more of something, add it. Sometimes that may be cacao powder or more banana or dates to make it sweeter. It’s your call. But try it to make sure you like it because this paleo chocolate pudding recips is not your ordinary chocolate sweet pudding.
Next, pour your pudding into a bowl and store in the refrigerator. I store mine in a mason jar because it’s easy to transport and it looks cool and makes me feel like a DIY badass.
You can use all sorts of fun toppings on this paleo chocolate pudding or no toppings at all. I like to use some of the following:
- Sliced or Slivered Almonds
- Coconut Flakes
- Goji Berries
If you decide to use toppings, you can put them on the pudding and store them in the fridge together.
This recipe only makes one serving of paleo chocolate pudding so if you want to make more, I suggest doubling the recipe.
