My Whole30 Challenge, Day 15 Recap: Over The Hump

Beef & Broccoli - Paleo and Whole30 Approved

Beef & Broccoli – it’s what’s for dinner!

Monday morning I woke up feeling very tired from the weekend away. I did not feel the normal “glow” I’ve been feeling the past week or so on Whole30. I felt tired, irritable, and cranky. I kept my meals pretty perfect and I am sure it helped to some degree but I was still tired. Driving to Mammoth over the weekend and then turning around and coming back to work is very tiring but worth it.

For breakfast I had my standard hard boiled eggs and veggie juice. I had planned on coming home for lunch but was too busy at work so I had a green smoothie- kale, pineapple, coconut milk -and tuna with no mayo at the local gym near my office.

We were pretty much out of food so I went to Whole Foods after work and got some food for the week. I got chicken and some beef. We have our produce box from Farm Fresh To You coming this week so I only needed to stock up on meat. And eggs. And more coconut oil. So I guess we were out of a lot of stuff.

When I got home from the grocery store I decided to make us beef and broccoli for dinner. I attempted this previously in the first week of my whole 30 and the broccoli turned out mushy. I didn’t really want to follow a recipe so heated 2 tablespoons of coconut oil in a pan. I threw in some garlic and ginger into the mini food processor and chopped it up. Then I added half an onion and chopped that up as well. I then added the garlic, ginger, and onion mixture to the sauté pan. It smelled delicious. In a separate pan I filled about an inch worth of water and stuck the head of broccoli Into the pan. I added 2 lbs of grass fed beef cut into stir fry strips to the sauté mixture and cooked it until it was done. At the last minute I added the chunks of broccoli so they wouldn’t get mushy. They turned out great! I even chopped up some carrots and put it in the mixture to use as garnish and make the dish more colorful. It was so good!

After dinner I was really tired so I got into my pajamas and headed to bed for an early evening. I was in bed and asleep by 10:15 PM. This is very early for me so I was proud of myself for getting into bed at a decent hour. Sleep is so important and I am working on making it more of a priority in my whole30!

    I was feeling tired and cranky today too, but I’m only on day 4. I can’t wait to get this “glowing” feeling you mention. Good for you for getting good sleep in.

      Thanks! I think I started to feel the good sleep around day 5 or 6.

    I never follow recipes because I try to make everything healthier, but my food never really comes out that good 🙂
