Quick & Easy Gluten Free Pasta Salad

Summer time is just around the corner and I am sharing one of my favorite recipes! I love making this pasta salad in one big batch because it can last an entire week. The best part – it’s so easy to make gluten free!

I am all about simplicity when it comes to making meals. When I’m working from home, I like to have lunch items that are easy to grab. This pasta salad is so quick and easy, you’ll regret not finding this recipe earlier.

This is also the perfect recipe for BBQ’s and social gatherings. It’s always been a hit when I was working in the office. Even better – SO easy to make this gluten free! Grab the following ingredients and see for yourself:

  • 1 Box Gluten Free Rotini
  • 2 Cans of sliced olives
  • 1 Red onion
  • 1 Carton of cherry tomatoes
  • 2 Cups of shredded parmesan
  • 1 Bottle of Italian Dressing

Grab a pot and cook pasta. While the rotini is boiling, start cutting the tomatoes. You can cut them in halves or quarters, whichever you prefer. Drain the olives and dice the red onion, I prefer only half of the onion, but it’s your call!

One the pasta is done, drain and rinse under cold water. I let it chill for a little longer and then place in a large bowl. Add in tomatoes, onions and black olives. Coat the pasta with half bottle of Italian Dressing. Once you combine all ingredients, let it chill in the fridge for about 2 hours. Enjoy!

  • Bell Peppers
  • Artichokes
  • Grilled Chicken
  • Avocado
