Awesome Fridays: April Edition

Awesome Fridays are a weekly feature where I post all things I’ve found to be awesome over the last week. Happy Awesome Friday, everyone! I hope your Easter weekend was great. Mine was awesome. I made an Easter brunch for my family and it was delicious. I made an egg souffle with eggs, mushroom, asparagus, onion, and chicken sausage. We served it with avocado. I also made a fruit salad with walnuts and shredded coconut. It was so fun and festive. Here’s a look at the spread I made:

And just like I said I would last week, I made gluten-free coconut cake. I used a gluten-free cake mix, coconut milk, coconut sugar (a first for me) and added white chocolate chips and shredded coconut to the batter. It was delicious! I added buttercream frosting and put jelly beans on top. A complete Easter treat.

The night before I also prepped some paleo apple egg muffins so my family would have something to munch on Easter morning without bugging me to cook the souffle faster. They were a big hit!

I also tried my hand at making my own chocolate for the first time. My friend Sarah at Low Carb Kittysent me a recipe and I decided to try it out. I bought a chocolate mold on Amazon and went to work. That’s the beauty of the internet – I would never have time to drive around town looking for a chocolate mold. But I can find one on Amazon in 5 minutes and have it at my doorstep in 2 days. Brilliant.

I was pretty amazed at the volume of food I was able to cook over the weekend. We still have leftovers! It’s bomb.

In other news, my favorite yoga studio in Manhattan Beach – The Green Yogi – is having a killer deal on Groupon today. If you live in the area, get in on this! I love this place and consider it a true treat whenever I get to go there.

I also got my latest Stitchfix order this week. Stitchfix is a try-on at home clothing delivery service. They send you 5 pieces for a $20 styling fee. You fill out an 80 question survey so they can get an idea of what your style is and what you want. Then they send you goodies to try on. I’ve lost weight recently and needed to get new clothes and I don’t have much time to shop in malls and I also am fashion challenged and have no idea what to wear so this service really helps me out! I will post a reveal of what came in my box next week!

In other news, there are baby duckies hanging out in the courtyard fountain at my office building. They are so darn cute and whenever I see them I get so happy. I love animals and how they can make you feel this way! Check out this pic and tell me you feel the love here:
