What Do You Eat for Breakfast?

People always say that breakfast is the most important meal of the day. It really is true. What you put in your body first thing in the morning sets the tone for the rest of the day. This month’s photo challenge from Souce4Women is to upload a picture of your healthy breakfast. This one is a fun one for me because I consider breakfast to be one of my favorite meals.
If you’re unfamiliar with Source 4Women, it’s a community created by United Healthcare that provides healthy living information on things like nutrition exercise, health screenings and more for women. Every month they do a photo contest to encourage you to live a healthy and active lifestyle. I suspect that this month’s challenge might be tied in with March being National Nutrition Month.
One of my standard breakfasts is a green smoothie. I was recently introduced to brazil nuts by a friend and thought they were delicious. I decided to add a couple to the Nutribullet and grind them up along with almond milk, spinach, 1/2 banana, dates, and ice to make a green smoothie. It was delicious! Here is the photo I uploaded to the gallery this month:
I always love breakfast because I think it’s one of the easiest meals to eat healthy. Some of my favorite breakfasts are two eggs (hard boiled or fried) w/ spinach or sausage, a green smoothie, gluten-free smashed avocado toast, or greek yogurt with blueberries. The avocado toast is a new one I just discovered recently and it is also very good.

Today – oatmeal with almonds, pistachios and dried cherries with a dash of almond milk washed down with orange/peach/mango juice.

I eat oatmeal everyday for breakfast. As a runner it helps to keep me fueled during long or intense runs. I use old fashioned oats on the cooktop and have a few different varieties that I switch between. My favorites include Banana/Nut/Cranberry, Carrot Cake, Apple Pie, Pear/Pecan/Date, and Strawberry/Almond/Fig.

You’re the second person to mention oatmeal. Do you mix in fresh fruit or is it the kind in the packets?

I use fresh fruit with the old fashioned oats cooking them on the stovetop. I only takes a few minutes since I don’t like them mushy. At the beginning of the week I prepare a bit of quinoa that I toss in everyday also. I’ve been on the Carrot Cake variety kick for awhile now. I use the matchstick carrots along with the oats/quinoa and add unsweetened coconut, raisins, walnuts, chia seeds, flaxseeds, cinnamon, nutmeg, crystallized ginger and a drizzle of honey.
I clicked to share with friends, but it doesn’t seem to know I did. How does that entry actually work? Aaack.
