Gluten-Free No Bake Peanut Butter Energy Balls Recipe
Have you ever heard that breastfeeding makes you really hungry? It’s the truth! And thirsty, too. I took home a 32 oz jug from the hospital when Baby Strong was born and I literally refill it about three times per day. I feel like I’m ravenous all the time – which makes sense since Baby Strong is already over 14 pounds at two months old!
I don’t have much time in the kitchen right now so I’ve been looking to quick, easy snacks to keep on hand in the house. I have been trying out different recipes for bars and snacks for breastfeeding moms that help with energy and milk production. I bought some flaxseed (supposedly helps boost milk supply) and some gluten-free brewer’s yeast (aff link) and have experimented with different recipes for gluten-free energy bars, bites, and cookies. So far my favorite has been this gluten-free no bake peanut butter energy balls recipe. The first time I made these I mixed them by hand and it was super gooey. The second time I made them I decided to mix all the ingredients in my Kitchenaid Stand Mixer (aff link) and it was way easier to mix.
This gluten-free no bake peanut butter energy balls recipe is not only good for breastfeeding moms, but anyone looking for a great all-around energy snack. My husband loves them and eats them as often as I do. I posted a video of me making these on Instagram stories and several people asked for the recipe. I also made a batch and took them on our annual family camping trip and everyone loved them so I decided it was time to post the recipe.
Gluten-Free No Bake Peanut Butter Energy Balls Recipe
Here’s what you will need:
- 1 and 1/3 cups peanut butter. This is the brand I love. It’s called GoodSpread and for every jar sold they give a packet of fortified peanut butter to children suffering from severe malnutrition.
- 1 cup semi-sweet chocolate chips
- 2 cups gluten-free rolled oats
- 1 cup ground flaxseed
- 4 tablespoons honey. I use this kind from Heavenly Organics. It’s organic, raw, and pesticide-free.
Mix all ingredients together. I used a KitchenAid mixer but you could mix by hand too. After all the ingredients are mixed, use a spoon to measure spoonfuls of mixture and roll into balls. You can make the energy balls as large or as small as you’d like. Sometimes I make a batch of varied sizes so I can grab and go depending on how hungry I am.
This recipe makes a large batch of energy balls. I usually put half in the refrigerator and then freeze the other half. They last about a week in the fridge. Since there are only five ingredients, I’ve been making sure I always have the ingredients on hand in our pantry and then make this recipe whenever I have a free moment.
