
Clean Eating Tacos Recipe: Paleo & Whole30 Approved
I whipped up this recipe one night when I was on Whole30 and wanted tacos. I can still enjoy tacos while being gluten-free because of the corn tortillas but those are a no no on whole 30. So I decided to make clean eating, paleo approved tacos. I didn’t have a recipe to follow so I decided to wing it. They turned out great. Now I will share it all with you:
What You Will Need:
- 1 lb grass-fed ground beef
- 1 head butter lettuce (or half a head)
- Paprika
- Cayenne pepper
- Sea salt
- Pepper
- Red chili flakes
- Coconut Aminos
Sauce:
- Olive Oil
- Apple Cider Vinegar
- A touch of garlic (not too much or you will be smelly!)
- Sea Salt
- Cayenne Pepper
- Curry Powder
Garnish:
- Avocado
- Chopped Onion
- Salsa (optional. you could add it but you don’t really need it because of the sauce)
First I heated the coconut oil in a pan. Then I added the spices to make a nice base mixture. I am not going to tell you how much to add because everyone likes their spice levels different. Mix it up well and add in the meat. Add additional spices as necessary.
While the meat is cooking, wash your head of butter lettuce and carefully take off the biggest pieces of lettuce. This will be your “shell.” Don’t whine about not having a tortilla. It’s actually crisp and refreshing. Place the lettuce shells on a separate plate and set aside.
In a very small bowl (ie, one for dipping sauces) add the 2 tbsps of olive oil, a couple tbsps of apple cider vinegar, sea salt, cayenne pepper, and curry powder. Add a touch of chopped garlic. DO NOT ADD A CLOVE OF GARLIC. It will be way too strong and no one will want to hang out with you for a couple of days! Keep in small dipping bowl and set aside. Serve with small teaspoon.
Next, make the garnich. I chopped up avocado and onion and put them on the side so we could add as much or as little as we liked to our own plates.
One the meat is done, put some in a lettuce tortilla, drizzle a little sauce, add some avocado and onion and WALA – clean eating tacos! These were one of my favorite meals I have made so far. Enjoy!
